
Flax Muffins - GF, DF and low glycemic
1 cup brown rice flour
1 cup buckwheat flour
1 teaspoon baking soda
1 tsp cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
1/2 cup coconut sugar
1/2 cup coconut oil (melt before using)
2 eggs
1/4 cup flaxseeds
1 cup coconut milk
Blend all ingredients together. Bake at 325 degrees 25 minutes or until cooked inside. Enjoy these gluten free, dairy free muffins!
