
Quinoa Salad (great for breakfast too!)
Ingredients:
2 cups quinoa
4 strawberries chopped
2 Tablespoons of goji berries
Handful of chopped tomatoes
Handful of fresh mint
Sliced mushrooms
2 tablespoons olive oil
Salt & Pepper tot taste and any other seasonings
Method:
Cook quinoa according to package. Then cool and mix in all other ingredients. I like to keep it fresh in mason jars...Enjoy!
